Ingredients
- 400g tin of chickpeas, dried with a tea towel
- 1 tbsp extra virgin olive oil
- sprinkle of salt
Method
- Heat oven to 200°C.
- Mix chickpeas, olive oil and salt together on a baking tray using your hands.
- Cook for approximately 20 minutes (or until crisp), stirring after 10 minutes.
- Season with 2 tsp of your choice of herbs and spices (such as rosemary and lemon zest).
- Keep fresh in an air-tight container for 2-3 days.
Quick Tips
- Add more spice to your life by playing around with different herbs and spices including 2 tsp of: paprika, onion and garlic powder; garam masala, or curry powder.
- These chickpeas will have a softer texture after a day than store bought chickpeas as this recipe is baked and not fried.
